Goose Ruben Cups

This recipe incorporates corned goose to make a quick and appealing appetizer. Using an Instant Pot and premade wonton wrappers will make these appetizers very fast and easy to make. If you don’t have goose, you can substitute any corned red meat. And to keep a crisp shell, don’t forget to squeeze as much moisture out of the sauerkraut. Before serving, I like to add a little chopped pickle on the top as well as a drizzle of Thousand Island dressing.

Ingredients:

2 cups shredded corned goose breasts

2 - 6 cups chicken stock, depending on pan size

1 cup sauerkraut, with as much of the liquid removed as possible

⅔ cup thousand island dressing

2 ½ cups or 8 oz of grated swiss cheese 

1 12 oz package of wonton wraps, (you will only need ½ to ¾ of a package)

2-3 baby dill pickles, chopped

Directions

Place 2 corned goose breasts in an Instant Pot with just enough chicken stock to cover them. Seal the instant pot and pressure cook for 30 minutes on high pressure. Do not release the pressure manually, let it come down naturally. If you do not have an Instant Pot, place the breasts in a sauce pan of chicken stock on the stove with enough stock to cover the breasts with about an additional inch of liquid. It will cook down. Simmer over medium low heat for 1 hour. Add chicken stock as needed to keep the breasts covered with liquid. 

Preheat the oven to 350 degrees Ferinhight. 

Place won ton wrappers in the bottom of a nonstick muffin tin, one wrapper per cup. Corners will fold up the sides of the tin. Line the sides of the tin closely with the wrapper. Bake at 350 degrees for about 5 minutes or until the corners begin to brown.

Measure 1 cup of sauerkraut in a mesh strainer and press as much of the moisture out as possible. Discard the sauerkraut juice. Set aside. Once the goose breasts are done, remove from broth and allow to cool. Cut the breasts in slices then shred finely with fingers in a medium mixing bowl. Add the pressed sauerkraut, thousand island dressing, swiss cheese to the mixing bowl of meat. Mix well to incorporate all the ingredients. Place a generous spoonful of meat mix into each baked wonton wrapper.

Cook at 350 degrees for 15 minutes, or until golden brown.

Lightly drizzle additional thousand island dressing over the tops of each cup. Top the goose cup with a teaspoon of diced baby dill pickles. Serve at your next party!
